Pistachio Pesto Salmon Pasta

Grab ingredients from the freezer aisle for an easy and delicious Italian inspired pistachio pesto salmon pasta!

Ingredients:
• 2 frozen salmon filets
• Fixa Foods Pistachio Pesto
• 8 oz pasta (we opted for frozen gluten free @caulipower linguine)
• Roasted pistachios
• EVOO
• Honey
• Salt & Pepper
• Pasta water (to add to pesto to make the sauce the perfect consistency)

Method:
1. Preheat oven to 450 F.
2. Remove salmon from packaging and rinse off any ice crystals.
3. Arrange the salmon on a baking sheet lined with parchment paper.
4. Drizzle with EVOO, sprinkle with salt & pepper, add a drizzle of honey and lightly press chopped pistachios into the salmon.
5. Bake salmon for about 15-20 minutes or until a thermometer reads 125 F - 130 F.
6. While your salmon is cooking, cook your pasta and make sure to save about 1/3 cup pasta water for our sauce. *we may not need the full 1/3 cup, it’s up to your preference!
7. In a separate pan, add Fixa Foods Pistachio Pesto and pasta water until it reaches a satisfying consistency for our pasta, then add the cooked pasta tossing it in the pesto sauce.
6. Plate your pasta and top with a salmon filet.
7. Enjoy this super simple and delicious dish!
